Penne alla Vodka

Ingredients:

  • 12 oz (340g) penne pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • ½ tsp red pepper flakes (adjust to taste)
  • ½ cup vodka (optional)
  • 1 can (14 oz) crushed tomatoes
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 tbsp butter
  • Fresh parsley or basil for garnish

Instructions:

  1. Cook Pasta: Bring a large pot of salted water to a boil and cook the penne pasta until al dente. Drain and set aside.
  2. Prepare Sauce: In a large skillet over medium heat, heat olive oil and sauté onions until soft. Add garlic and red pepper flakes, cook for another 30 seconds.
  3. Deglaze with Vodka: Pour in the vodka and let it simmer for 2-3 minutes until slightly reduced.
  4. Tomato Base: Add the crushed tomatoes, season with salt and pepper, and let it simmer for 10 minutes, stirring occasionally.
  5. Make it Creamy: Stir in the heavy cream and butter. Mix well until smooth.
  6. Combine with Pasta: Add the cooked penne to the sauce and toss until fully coated.
  7. Final Touch: Sprinkle Parmesan cheese and mix. Garnish with fresh parsley or basil.
  8. Serve: Plate and enjoy hot, optionally with extra Parmesan and chili flakes.
