Penne alla Vodka
Penne alla Vodka
Ingredients:
- 12 oz (340g) penne pasta
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- ½ tsp red pepper flakes (adjust to taste)
- ½ cup vodka (optional)
- 1 can (14 oz) crushed tomatoes
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- Salt and black pepper to taste
- 2 tbsp butter
- Fresh parsley or basil for garnish
Instructions:
- Cook Pasta: Bring a large pot of salted water to a boil and cook the penne pasta until al dente. Drain and set aside.
- Prepare Sauce: In a large skillet over medium heat, heat olive oil and sauté onions until soft. Add garlic and red pepper flakes, cook for another 30 seconds.
- Deglaze with Vodka: Pour in the vodka and let it simmer for 2-3 minutes until slightly reduced.
- Tomato Base: Add the crushed tomatoes, season with salt and pepper, and let it simmer for 10 minutes, stirring occasionally.
- Make it Creamy: Stir in the heavy cream and butter. Mix well until smooth.
- Combine with Pasta: Add the cooked penne to the sauce and toss until fully coated.
- Final Touch: Sprinkle Parmesan cheese and mix. Garnish with fresh parsley or basil.
- Serve: Plate and enjoy hot, optionally with extra Parmesan and chili flakes.
